Ingredients
Preparation
- Heat a medium pot of salted water to boiling on high.
- In a medium-sized pan, heat a drizzle of olive oil on medium-high until hot. Add the beef and season with salt and pepper. Cook, frequently breaking the meat apart with a spoon, 4 to 5 minutes, or until lightly browned. Carefully drain off and discard any excess oil.
- Add the chopped garlic, tomato paste, and chile paste. Season with salt and pepper. Cook, stirring constantly, for 1 to 2 minutes, or until thoroughly combined and the beef is cooked through.
- Add 3/4 cup of water and cook, stirring frequently, for 2 to 3 minutes, or until the sauce is thickened. Turn off the heat.
- While the beef cooks, add the gnocchi to the pot of boiling water. Cook for 2 to 3 minutes or until the gnocchi float to the top of the pot. Drain thoroughly.
- Add the cooked gnocchi and mascarpone to the pan of cooked beef. Stir to thoroughly combine.
- Divide into two bowls and top with fresh basil.
