French Onion Soup

Ingredients

Preparation

Make Soup:
  1. Melt butter in a medium-sized Dutch oven or saucepan over medium heat. Add onions, season with salt and pepper, stir, and then cover for 5 minutes.
  2. Remove the lid and reduce temperature to medium-low. Let onions caramelize until golden brown, stirring occasionally, about 20 minutes.
  3. While onions are caramelizing, warm broth in a separate medium-sized saucepan.
  4. Once onions are caramelized, add garlic and thyme, and cook for about 2-3 minutes, stirring occasionally.
  5. Add wine and sherry to the caramelized onion mixture and allow it to come to a boil. Stir in flour, then turn heat off.
  6. Slowly add warmed broth to the caramelized onion mixture. Turn heat back on to medium-high, bring to a boil, then simmer for 5-7 minutes. Turn off heat. Salt and pepper, to taste.
Assemble and Broil the Soup:
  1. Heat the broiler. Arrange individual ovenproof soup bowls on a baking sheet and ladle soup into bowls, filling them up.
  2. Cover the top of each bowl with bread slices, then generously sprinkle each with Gruyère cheese.
  3. Broil for 2-3 minutes, until the cheese melts and browns. Serve immediately.

Notes

Be sure to remember that the soup bowls will be hot. I suggest using oven mitts to place them on a plate to make moving them to the table easier.
