Cheesy Strata with Sausage and Mushrooms

Preparation

Toast Bread:
  1. Preheat oven to 350°F. Toast bread in a single layer on a rimmed baking sheet until beginning to dry out but not yet browned, 8–10 minutes. Set aside.
Cook Vegetables:
  1. Meanwhile, heat 1 tablespoon olive oil in a 6" cast-iron skillet over medium-high. Arrange mushrooms in a single layer and cook, undisturbed, until lightly browned, about 3 minutes. Cook, stirring often, until mushrooms are golden brown all over, about 1-2 minutes. Salt and pepper, to taste. Add leeks and cook, stirring often until softened, about 2-3 minutes.
  2. Add sausage and stir for another 1-2 minutes, until sausage is heated through. Remove from skillet, place in a bowl, and set aside. Wipe down skillet and let cool.
Prepare Egg Mixture:
  1. In a medium bowl, whisk together the oil and milk. Add the eggs and whisk well again.
Assemble and Bake:
  1. Once skillet is cool to the touch, grease with a little oil. Arrange half of the bread in skillet. Cover with half of mushroom-sausage-leek mixture, then top with half of Gruyère. Top with remaining bread and sausage mixture. Very slowly, drizzle the liquid mixture over the bread and sprinkle with the cheese. Press down on the strata with the palms of your hands to help the bread absorb the egg mixture. Scatter remaining Gruyère on top. Cover the dish with foil and refrigerate overnight.
  2. When ready to bake, heat oven to 350°. Remove the strata from the refrigerator, take the foil off, and allow it to sit while the oven heats.
  3. Bake strata until golden brown and no liquid seeps out when a knife is inserted into the center, 45-50 minutes. Let cool slightly before serving.
