Preparation

Prepare Spicy Pineapple Sauerkraut:
  1. In a medium bowl, combine the sauerkraut, pineapple, jalapeño, red onion, and lime juice. Salt, to taste, then set aside to marinate.
Prepare Chicken and Breading Station:
  1. Working one at a time, place a piece of chicken between two pieces of plastic wrap and gently pound it until it is thin without tearing. Transfer each flattened chicken piece to a clean plate.
  2. Set up a breading station with three wide, shallow bowls. Mix flour, cayenne, and paprika in one bowl, the beaten egg in another, and panko breadcrumbs in the third.
  3. Coat each chicken piece by dipping it first in flour, then egg, and finally in panko, pressing the breadcrumbs onto the chicken with your hands. Repeat with the remaining chicken pieces.
Cook Chicken:
  1. Preheat the oven broiler.
  2. In a large non-stick pan, heat oil over medium-high heat until very hot but not smoking. Working in two batches, fry the chicken pieces until golden brown, approximately 3 minutes per side. Transfer the browned chicken to a sheet pan.
  3. Evenly distribute Gruyère cheese over the top of each chicken piece, ensuring full coverage.
  4. Place the sheet pan with the cheese-topped chicken under the broiler until the cheese is melted and lightly browned, about 3 minutes.
Assemble and Serve:
  1. Remove the sheet pan from the oven and divide the chicken among two plates.
  2. Top each chicken piece with the spicy pineapple sauerkraut and serve immediately.
