Ingredients

Preparation

  1. Heat oil in a medium-sized Dutch oven over medium heat. Add onion, celery, and bell peppers, and cook until the onion is translucent, about 3 to 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
  2. Add the rice and stir, toasting for 30 seconds. Add tomatoes, stock, hot sauce, Worcestershire sauce, Cajun seasoning, paprika, and bay leaf. Bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, or until the rice is nearly cooked, stirring every 5 minutes to prevent burning and adding more chicken broth if needed.
  3. After 20 minutes, add chicken sausage and stir to incorporate. Season with salt and pepper to taste.
  4. When ready, fluff with a fork and garnish with parsley and scallions.
