- Heat oil in a medium-sized Dutch oven over medium heat. Add onion, celery, and bell peppers, and cook until the onion is translucent, about 3 to 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Add the rice and stir, toasting for 30 seconds. Add tomatoes, stock, hot sauce, Worcestershire sauce, Cajun seasoning, paprika, and bay leaf. Bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, or until the rice is nearly cooked, stirring every 5 minutes to prevent burning and adding more chicken broth if needed.
- After 20 minutes, add chicken sausage and stir to incorporate. Season with salt and pepper to taste.
- When ready, fluff with a fork and garnish with parsley and scallions.
