Creamy Asparagus Soup

- Bring a small pot of salted water to a boil. Cook the asparagus until tender, about 4-5 minutes. Remove the asparagus with a slotted spoon and set it aside in a bowl.
- In a medium pan over medium heat, melt butter. Saute the onion until translucent, about 5-6 minutes.
- Pour broth into the pan and add thyme sprig. Bring to a gentle simmer and keep it simmering for about 3-4 minutes.
- Remove the thyme sprig and pour the heavy whipping cream into the pan. Bring it to a gentle simmer, then add the lemon juice. Season with salt and pepper to taste and simmer for another 3-5 minutes.
- Turn off the heat and transfer the cream sauce to a blender. Add the cooked asparagus and grated Parmesan. Blend until smooth, then divide the mixture between two bowls. Garnish with asparagus tips.
