Bacon, Onion, and Cheese Tart

The savory blend of crispy bacon, caramelized onions, and creamy gruyère cheese atop a flaky puff pastry crust delivers a tantalizingly rich taste and delicate texture in every bite. 

And with just a handful of ingredients, you can create a brunch at home that looks and tastes like it came straight from a fancy bistro. 

Also great: your kitchen will be filled with the irresistible aroma of onions being caramelized in bacon fat. 

Mmmm. Bacon. 

I like to pour a couple of mimosas and serve this tart alongside a simple green salad or fruit platter for a well-rounded brunch spread for the two of us.

Ingredients

Preparation

  1. Preheat the oven to 400℉. Line a sheet pan with parchment paper.
  2. In a medium saute pan, cook the bacon over medium-low heat until rendered, 5 to 7 minutes. Add the onions and cook until they begin to soften, about 4-5 minutes. Salt and pepper, to taste. Set aside to let cool, then add the thyme to the mixture.
  3. In a bowl, combine the gruyère and crème fraîche. Set aside.
  4. Lightly dust a flat surface with flour and place the puff pastry on top. Gently roll into a 6-by-9-inch rectangle, and then transfer to the parchment-lined baking sheet.
  5. Using a fork, pierce the puff pastry with the tines, leaving a 1-inch border untouched.
  6. Spread the cheese mixture evenly on the area of puff pastry that has been pierced, leaving the 1-inch edge border unfilled, then top cheese with the bacon-onion mixture.
  7. Combine whisked egg and 1 tablespoon water and then brush the 1-inch border with egg wash.
  8. Place the baking tray in the oven and bake until tart crusts are dark brown, about 20 minutes.
  9. Remove from the oven and garnish with the Parmesan and chives. Serve immediately or at room temperature.
