- Preheat the oven to 400℉. Line a sheet pan with parchment paper.
- In a medium saute pan, cook the bacon over medium-low heat until rendered, 5 to 7 minutes. Add the onions and cook until they begin to soften, about 4-5 minutes. Salt and pepper, to taste. Set aside to let cool, then add the thyme to the mixture.
- In a bowl, combine the gruyère and crème fraîche. Set aside.
- Lightly dust a flat surface with flour and place the puff pastry on top. Gently roll into a 6-by-9-inch rectangle, and then transfer to the parchment-lined baking sheet.
- Using a fork, pierce the puff pastry with the tines, leaving a 1-inch border untouched.
- Spread the cheese mixture evenly on the area of puff pastry that has been pierced, leaving the 1-inch edge border unfilled, then top cheese with the bacon-onion mixture.
- Combine whisked egg and 1 tablespoon water and then brush the 1-inch border with egg wash.
- Place the baking tray in the oven and bake until tart crusts are dark brown, about 20 minutes.
- Remove from the oven and garnish with the Parmesan and chives. Serve immediately or at room temperature.
